Rainbow Trout is available for sale year round at the Chapman Creek Hatchery. Our Rainbow Trout are raised in fresh water from Chapman Creek and are not fed growth hormones or treated with antibiotics ensuring a quality fish product.
Trout is one of the healthiest fish you can include in your diet, says Monterey Bay Aquarium’s Seafood Watch. Farmed trout, especially farmed rainbow trout, is a better choice than wild lake trout, since farmed trout is raised in freshwater ponds and raceways that are protected from environmental contaminants. The American Heart Association recommends consuming a 3.5-ounce serving of cooked fish like trout at least two times a week. Maximize trout’s health benefits by choosing low-fat cooking methods like broiling, grilling, baking or steaming instead of fried or breaded fish.
Rainbow Trout has a mild flavour and a delicate texture and can be poached, grilled, baked, fried or smoked.
Martins Smoked Rainbow Trout Recipe
Martin has volunteered at the Chapman Creek Hatchery for many years and has perfected this recipe for smoked Rainbow Trout
3 lbs Chapman Creek Hatchery Rainbow Trout
1/3 cup brown sugar
1 cup Soy sauce
1 cup water or pickle brine
1 tsp tobasco
3/4 cup rum
juice of two lemons
1 clove garlic
Mix brine ingredients until sugar has dissolved. Place trout and brine in a glassware container and marinate in the fridge for 24 hours.
Remove trout from brine and place on racks in the fridge to dry for four hours to form the pellicle which helps smoke adhere to the fish better.
Hot smoke until desired texture is achieved. Keep refrigerated after use
